Ingredients: 1 cup couscous. 1 1/2 cups water. 2 boneless, skinless chicken breasts. 1 ripe mango, diced. 1/2 red bell pepper, diced. 1/2 red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup roasted cashews, chopped. 2 tablespoons olive oil. Juice of 1 lime. Salt and pepper to taste.

Instructions: Bring 1 1/2 cups of water to a boil in a saucepan. Add the couscous, mix it in, cover, and take it off the heat. After 5 minutes, use a fork to fluff it up. Add salt and pepper to the chicken breasts. In a pan, heat the olive oil over medium-high heat. For about 6 to 7 minutes on each side, or until done, cook the chicken. Take it off the heat and let it rest for a few minutes. Then cut it into strips. Chicken slices, mango chunks, red bell pepper, red onion, cilantro, mint leaves, and roasted cashews should all be put in a large bowl together. Add the lime juice to the salad and mix everything together. Add more salt and pepper if you think it needs it. You can serve the mango chicken salad with couscous right away, or you can put it in the fridge to make a cool salad.
