As with all my headcanons these can be bent or flipped or discarded at any time depending on what dynamic I'm in the mood for... But here's what I've got!

Feeder: K.eralis is the only one that makes me go "this man loves to fatten his partners up and is 100% a lover of good food and drinks, but gets nothing out of overeating himself." He is perfect feeder material for so many reasons, don't even get me started he's SUCH a specific kind of service top. I have got to write some x.Bralis feederism because that dynamic is also something special oughhh. Um. Anyway.
Fat Admirer (self-lovable): also known as "into bigger bodies, might even consider themselves feeders, haven't quite realized (or accepted) that themself gaining weight is also an option". The H.ermits in this category can be loosely grouped together into:
"Feeder" in denial: B.dubs, G.em.
Oblivious: S.kizz, & to some extent R.en (he's also in denial a bit)
Would probably be extremely open to exploring this side of the kink, but they're far too stressed / tired/ busy to get into all that right now (for the love of god someone take care of them): T.ango, Joe.
Switch: could go either way depending on the scene, the partner, the mood... Or in W.els' case (sorry W.els*), i don't know enough about them orz.
*Stuffing in armor is a fascinating concept though, as is an enemies-to-stuffers dynamic with H.elsknight. Hmm...
Feedee, (love)handle with care: this one's for the internalized fatphobia havers (I.mpulse, G.rian), the stat-loving health nuts (X.isuma), the ones with an ego who need to be brat-tamed into accepting their own softer side (D.oc, also G.rian a bit), and F.alsesymmetry (jock-to-chub but also it's F.alse so like. Handle With Care is implied).
F.alse & R.en have a whole character arc to go through before they can belong to the next category, a.k.a:
Mutual stuffer/gainer: People who want to eat good and be in good company while they do it, or just bring their partners along for the ride. H.ypxb are here because of that thing I wrote ages ago about them having a cute date at the P.ixelpulse noodle shop, B.eef is here because he's like if K.eralis was hornier about food (and also. Bear.), J.evin's just happy to be here, and P.earl is in this category because she's waiting for G.em and also I think my mc skin and hers should kiss. and give each other belly rubs.

Finally we have the Feeders! Pure gluttons who don't need the encouragement of a partner, they'll happily grow themselves solo for the love of the chub. Z.edaph is enthusiastic while J.oel is more of a tsundere about it, but both are firmly in this box; while M.umbo bounces between this category & being an oblivious-type Fat Admirer who himself is already fat (in which case C.onvex or P.earl or even a G.rian post-character development could help him figure it out).
I think the joy of G.rian is that in the beginning of a weight gain scenario, he absolutely would be embarrassed as hell, feeling all vulnerable with it. You’ve mentioned it before- he’s always trying to present his very specific persona, after all, and this is definitely not part of it- he doesn’t want to come off as soft, but now softness is just part of his body.
I really do think he could come to own it, though. Enjoy the sensation of his growing body. Especially if he knew some of the others were horny for it. “Soft” might not be part of his persona, but bratty and a bit demanding certainly is. I think he should sit himself down on his rapidly spreading ass and enjoy teasing whoever’s around him with little peaks of his body, with the potential promise of getting to touch him if they bring him more snacks. He’d take so much joy in requesting a just a little bit more, keeping their reward just out of reach until either they get sick of it or he’s worked himself up too much to resist letting himself get groped at least a little.
Idk let the boy be round and let him learn to enjoy it. Let him have a soft belly and heavy tits and wide hips and thick thighs and arms and a cute little double chin. He deserves it I think.

THIS. THIS RIGHT HERE. You've NAILED what I had in mind for G.rian with my big feederism H.ermit tier list. As soon as he stops clinging to that paper-thin scrap of a self-image he'd be the most insanely flirty teasing feedee, playing coy and oblivious but also totally incapable of hiding how turned on his own ballooning body makes him.
It's not just the weight itself, though, is it? With G.rian, there's always part of it that's about the attention. The effect his body has on other people affects him too... I think that'd be a really good way of having him "learn to enjoy" being big, like you said— putting on some weight by accident and realising one of his partners (picturing M.umbo but it could be anyone tbh) is extremely into it & thinking "hmm let's see where this leads". Starting to gain more intentionally, giving into cravings he's been trying to suppress for years and it feels so good, lettting himself go like this... He's definitely not into it though. Nooo no no no, this is just... Some temporary fun! It makes his partners happy, and he can always work off whatever junk he doesn't want in his trunk, right?

Days turn to weeks, and while G.rian has grown a lot in various exciting ways, some other very important things are steadily shrinking:
His desire to lose that "little" bit of "temporary" weight
The feasibility of losing it and of ever going back to his old size
The belief that he's doing all this just for his partners' reactions with no personal enjoyment whatsoever
His sense of shame (which is partly caused by ↓)
His wardrobe, specifically the number of clothes that cover him decently :3
Anyway you are so so correct, G.rian wg is as much about the journey as it is about the destination— and the destination is that post about how a fat belly and love handles can be a slut waist if you're not a fucking coward, hell yeah 🥰

poor birdy boy is practically wasting away, it's only kind to feed him up a little. and maybe he doesn't question as the portions slowly begin to increase, it's just a friend being kind and bringing him meals and sweets and inviting him over for tea. and if he slowly begins changing over the months, growing a fat chubby belly that sits on his lap and thick thighs that could easily split open trousers, his increased size making it harder to fly, and that lessened activity only helping him grow more as I encourage him to eat more... then it wasn't my fault.

During the Wheel of Misf.ortune stream, there's a lot of belly holding and moaning starting around 2:40:35, but mainly because he (Ta.ngo too) was feeling ill from the nasty/challenge food they'd eaten.
Me, opening the ask expecting three or four moments and being met with this absolute Zedbuffet: Hey!— hOLY MOLY YOU'RE HUGE!!

I've watched bits and pieces of those old ZITS irl streams and I LOVE when they acknowledge that Zed is younger and (by virtue of not being American) so different and interesting to the other 3... So this teasing slightly admiring maybe-proud "the boy can eat" comment from T.ango is just making me think of the ITS meeting their online British buddy irl for the first time and all 3 having the same exact thought of "oh my god he's adorable we are going to spoil him so good for the entire duration of his stay".

Something that's emerging through all these moments is that Z.ed is very candid about being a big guy who eats a lot, and I LOVE it. The casual tone throughout is just so refreshing compared to the ambient shame that other people's moments *cough* R.en and I.mpulse *cough* seem to be soaked in.
Listen I do enjoy the whole "ohh I'm so NAUGHTY, succumbing to these tasty temptations and being pUNISHED for it with a body that shows just how BAD I've been~ >.<" spin on wg. But usually, in your day-to-day life you're just A Fat Guy Who Likes Being Fat! And it gets exhausting, having to mix up this cocktail of catholic guilt and sexified D/s diet culture every time you start to enjoy being a glutton in a slutty way... So, yeah. Pigplay isn't really my thing, but Z.ed's already associated with one farm animal and the colour pink so it's a very very logical leap to make. Do you think about T.ango calling you "Piggy" often, Z.ed? Bit of a Freudian slip in that mishearing there, perhaps? Z.ed's brought back his gameshow for HC season 10 and all 4 ZITS are on the server, so maybe it's time for a rebrand!
Is That Pig Drooling At Me, the game where the pig is sitting on a slowly-rotating piston, and whoever he's facing when the wool blocks drop* gets to feed him! First person to have an empty plate wins, after which they all retreat to a bed where Piggy can enjoy belly rubs from the winner and comfortably pass out from a food coma... But only after finishing the other two plates, of course 🥰
*the usual up-down piston movement wasn't too kind to an overfilled stomach. Piggy's pained moans were nice, as was the sight of his fat jiggling and bouncing every time the piston extended... but not worth the show's runtime being cut in half due to decidedly unsexy nausea.

The way j.oel can never say no to l.izzie lends itself perfectly to feedism
( tangent: this is especially since she’s always been very vocal in the past about liking him chubby. she explained once his contact in her phone is a hamster 🐹 because it has chubby cheeks like him )
it starts off small. she’s always shown her affection to j.oel through gifts, so he doesn’t think much of it when l.izzies gifts start becoming mostly food. he makes sure to eat everything she gives her, even if the taste isn’t exactly to his liking. l.izzie always puts so much thoughts into her little gifts, so it would be a shame to not eat them, right? ^^
but it starts becoming more. she regularly appears with more substantial foods, even sometimes a whole cake.
he’s a little more hesitant about this. he knows eating everything l.izzie would be terrible for his weight (especially since the previous, lighter gifts already weren’t great for his waistline) but it’s L.izzie. it’s his wife. he can’t disappoint her. so, j.oel obediently finishes his plate every time. no matter how full he is, or how it causes the contents of his stomach to violently churn. at least l.izzies always there to help soothe his tummy in the aftermath.
long term though? his weight gets out of control. he tries his best to fight it, going to the gym as much as he can, but no matter what he does his gut just doesn’t disappear. he tries softly suggesting to l.izzie to maybe bring him a little less. she does for a little bit, but eventually his plate is back to overflowing again.
the worst part is that j.oel’s appetite starts to match his gluttony. his stomach impatiently growls when he sees l.izzie because he associates her so much with food.
they love each other so much and it shows sososo much on j.oel’s waistline <3
