Vegan rosé pasta with veggies.
Recipe — i coarsely ground peanuts instead of cashews since the former is less expensive. The sauce would have been finer if I’d used the right mixer. I used cucumber instead of zucchini — roasted cucumbers are delicious! I also roasted cherry tomatoes with the carrots and cucumber.
Finally, I topped off the cooked sauce with some pannai keerai (silver cockscomb or plumed cockscomb leaves) — just wilted it in.
I made enough sauce to last me a few meals.
I used 80g of unboiled pasta for tonight’s meal.
