We've all eaten so so well this week! The children have done phenomenally well and I think a huge part of this is the change to packed lunches for school. Amber is absolutely flying in the classroom and out at sports, so proud of her and can't believe how much her little body is changing on a daily basis. Last night they played football after school whilst I made this mini roast dinner. Roast lamb with herb crust, roast parsnips in Parmesan and almond flour crust cooked in lard from the beef bone broth, carrots and runner beans and roasted sweet potato. I've really limited sweet potato now, they have a couple of pieces once a week. This is a high fat low carbohydrate meal as usual, with the carbs coming from starchy root veg rather than processed or refined sources. This would be considered a high carb meal for them these days. We've focused massively on eating lots of fatty fish recently to get their omegas in. Also mixes up what was a high meat protein diet. At the pub the other night they had cauliflower cheese soup and black pudding, then a fillet of mackerel with veggies. I'm just amazed at the food choices they are making by themselves. This probably makes me sound like one of those crazy mums, but I'm genuinely so proud of them and perhaps I don't say it enough because I feel like it's wrong to shout about it.
