Ingredients: 2 cups shredded mozzarella cheese. 2 ounces cream cheese. 2 cups almond flour. 2 large eggs. 2 teaspoons baking powder. 1/2 teaspoon salt. 1 tablespoon everything bagel seasoning optional.
Instructions: Preheat your oven to 400F 200C and line a baking sheet with parchment paper. In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until both are melted and well combined. In a separate mixing bowl, whisk together the almond flour, eggs, baking powder, and salt. Add the melted cheese mixture to the dry ingredients and mix until a dough forms. Divide the dough into 6 equal portions and shape them into bagel-like rings on the prepared baking sheet. Sprinkle the everything bagel seasoning on top of the bagels, if desired. Bake in the preheated oven for 12-15 minutes or until the bagels are golden brown and firm to the touch.
