Had the first meeting with my supervisor today. Got introduced to the plan for the project. We're going to brew a variety of Nøgne Ø Brown Ale, trying out different temperatures for mashing and lautering, and see how this affects the profile of the wort. Hitting it hard with gas chromatography and mass specrometry to look at the molecular differences! We are also going to use two different strains of yeast to see how these affect the results.
We might also try and see if it is possible for us to find a good (better) protocol for making yeast starters for home brewing!
We're starting on Monday by preparing the yeast cultures! Stoked!
