Today’s baking experiment -or- my attempts to figure out how to deal with a user-surly oven.
1. I added 1/4 tsp of citric acid to the lemon juice. It gives the madelines exactly the lemony pop that I wanted (though there is a delay of its onset, which is actually even nicer).
2. I used a melon ball scooper. My first batch was perfect but smallish as I’d underfulled the cavities. My second batch, oddly enough, we’re perfect size-wise (one level scoop per cavity) but undercooked in the middle; I suspect that this is due to me not diffidently cooling the pan between batches (I only have the one pan), or possibly needing a touch more baking time.
During my next experiment, I will probably put the pan in the freezer for longer (15 or 20 min) in between batches and possibly add a minute to baking time. I may also add some lemon extract (or actual zest) to get some lemon oil in there for the smell.
Adam Savage’s assertion that it takes three tries of anything new to hone in on actual success is certainly holding to be true here. I would add “at least” to this assertion, as I think some projects are going to be more tricky than others (cf. popovers).
(I think I have modified this recipe enough to be able to post it when it meets my expectations, which I will do of/when that happens - citing the original recipes I used as foundations, of course.)
thinkin about if rowena and jack had gotten more screen time together... the aunt cool aunt/ traumatized toddler dynamic would have been very fresh to see just sayin
