Honey-Spice Cake (Lekach)
@ all my vegan jews looking for honeycake recipes
i used this recipe http://veganstart.com/vegan-honey-cake/
i had to homemake the applesauce b/c it’s not a normal thing in england, that was just simmering chopped peeled apple in a bit of water with sugar & cinnamon for about 45 minutes
i also left out the date honey and agave nectar because i had neither, and i added 2/3 cup of golden syrup to make up for it. i think using bee honey is fine i just didn’t have any of that either
i can’t tell you how it is now b/c it’s just in the oven and i’m not planning on eating it until chag but the batter tastes really good
A much more prettier lekach I made for a New Year's Eve gathering I went to last year.

Lekach - Jewish Honey Cake - Rosh Hashana Traditional Jewish New Year Cake Indulge in the sweetness of tradition with Lekach, the perfect Jewish Honey Cake for Rosh Hashanah.
My first attempt at lekach, even though Rosh Hashanah was long ago. I made it with coffee, as a test run. Depending on who has it, I will alternate between making it with tea and coffee.
