My birthday beer yesterday at my favorite restaurant Les Brigittines, offered by chef/owner Dirk Myny. Thank you Dirk! I enjoyed this Lambic D'Aunis a lot. It's a grape lambic made with Pineau D'Aunis grapes and has an elegant softness with mild peppery notes. A gem. Dinner was Veal brain à la façon de grand-mère and 'good old fat cow' as main, an intense tasting piece of fatty milk cow. 'Zennepot in a bun', bottle of Cantillon Gueuze on the side. That's what I had for lunch at @pistolet_original .The Zennepot is an iconic Brussels dish, invented by the even more iconic Dirk Myny, chef and owner of the fabulous Brussels restaurant Les Brigittines. It's composed of white cabbage cooked in Cantillon Gueuze, dry sausage(a typical bar snack), bloempanch(authentic Brussels black sausage) and whelks. The combination of these ingredients might sound weird on paper but in the plate they make a beautiful symbiosis of sweet, mildly tart, savory, salty and just damn delicious. And they represent Brussels in all of its facets. Now you can taste this treat at @pistolet_original , served in a bun(without the whelks though). Good, honest fastfood the way I like it.
