This warm peri peri chicken salad with lime dressing is a tasty salad that tastes great with the spicy peri peri chicken and the tangy lime dressing. It's great for a meal that's light but filling.
Ingredients: 2 boneless chicken breasts. 2 tablespoons peri peri sauce. Salt and pepper to taste. 2 cups mixed greens e.g., lettuce, spinach, arugula. 1/2 red onion, thinly sliced. 1/2 cucumber, sliced. 1/2 red bell pepper, sliced. 1/4 cup cherry tomatoes, halved. 1/4 cup corn kernels fresh or canned. 1/4 cup crumbled feta cheese. 1/4 cup toasted pine nuts. 2 tablespoons olive oil. Juice of 2 limes. 1 teaspoon honey. 1 clove garlic, minced.
Instructions: Marinate the chicken breasts in peri peri sauce, salt, and pepper for 30 minutes. Preheat a grill or grill pan over medium-high heat. Grill the chicken for 6-8 minutes per side or until cooked through. Remove from heat and let it rest for a few minutes before slicing it into strips. In a large salad bowl, combine the mixed greens, red onion, cucumber, red bell pepper, cherry tomatoes, corn kernels, feta cheese, and toasted pine nuts. In a small bowl, whisk together the olive oil, lime juice, honey, and minced garlic to make the lime dressing. Drizzle the lime dressing over the salad ingredients and toss to combine. Top the salad with the grilled peri peri chicken strips. Serve warm and enjoy!
