Ingredients: 1 pound large shrimp, peeled and deveined. 2 avocados, sliced. 4 cups mixed greens. 1/4 cup cherry tomatoes, halved. 1/4 cup cucumber, sliced. 1/4 cup red onion, thinly sliced. 1/4 cup fresh cilantro leaves. 2 tablespoons olive oil. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. For the Tahini Dressing:. 1/4 cup tahini. 2 tablespoons lemon juice. 2 tablespoons water. 1 clove garlic, minced. Salt and pepper to taste.
Instructions: In a bowl, combine the shrimp, olive oil, paprika, cayenne pepper, salt, and pepper. Toss to coat the shrimp evenly. Heat a skillet over medium-high heat and add the seasoned shrimp. Cook for 2-3 minutes per side, or until they turn pink and opaque. Remove from heat and set aside. In a separate bowl, whisk together the tahini, lemon juice, water, minced garlic, salt, and pepper to make the dressing. In a large salad bowl, arrange the mixed greens, sliced avocado, cherry tomatoes, cucumber, red onion, and fresh cilantro. Top the salad with the cooked shrimp.
