This recipe, which is Paleo-friendly and uses fresh ingredients instead of high-histamine foods, is designed for people who are histamine intolerant. When combined with soft chicken and smooth avocado pesto, zucchini noodles make a delicious and filling meal. They're a great substitute for regular pasta.
Ingredients: 2 medium zucchinis, spiralized into noodles. 2 boneless, skinless chicken breasts, thinly sliced. 1 ripe avocado. 1/4 cup fresh basil leaves. 1/4 cup fresh parsley leaves. 2 tablespoons lemon juice. 2 cloves garlic, minced. 2 tablespoons extra virgin olive oil. Salt and pepper to taste.
Instructions: In a blender or food processor, combine the avocado, basil, parsley, lemon juice, garlic, olive oil, salt, and pepper. Blend until smooth to make the avocado pesto. Heat a skillet over medium heat and add a little olive oil. Cook the sliced chicken breasts until browned and cooked through, about 5-7 minutes per side. Season with salt and pepper to taste. Remove from skillet and set aside. In the same skillet, add the zucchini noodles. Cook for 2-3 minutes until just tender but still firm. Toss the cooked zucchini noodles with the avocado pesto until evenly coated. Serve the zucchini noodles topped with the cooked chicken slices. Enjoy!
