Time to break out our little ice cream machine. Maesil-cheong, or green Japanese plum syrup, is made from putting tons of maesil into a big clay pot (or plastic jug more often, these days), covering them with sugar and letting them ferment. It’s great mixed with cold water for a tangy sweet tea, but I like it even better in ice cream.  Find the recipe for maesil ice cream here.
