Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 tsp ground cinnamon. 1/2 cup unsalted butter, melted. 1/2 cup maple syrup. 1/2 cup buttermilk. 2 large eggs. 1 tsp vanilla extract.
Instructions: Preheat your oven to 375F 190C. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon. In another bowl, combine the melted butter, maple syrup, buttermilk, eggs, and vanilla extract. Mix well. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it's okay if there are a few lumps. Line a muffin tin with paper liners or grease the muffin cups. Spoon the muffin batter into the cups, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
