The VEGETABLE EGG MUFFIN… Serves: 1 Prep time: 15 mins Cook time: 20 mins Calorie: 195 kcal Steps: 2 or above Ingredients: 1 raw egg 5g Green vegetables 1g Herbs - Black pepper 100g Spring Onions 50g Green pepper 50g Cauliflower. To Prepare: 1. Grease your muffin tin properly with olive oil or light oil spray -use a good quality non-stick muffin tray, if in doubt, use parchment paper or cupcake liners to prevent sticking. 2. Wash and dice cauliflower, spring onions and green pepper 3. Preheat oven to 350°F\180°C 4. In a bowl, whisk together egg and onion. Season with salt and pepper. 5. Pour mixture halfway up into each tin of the greased muffin tin –about 3 6. Divide your vegetables into 3 and add to the eggs 7. Bake for 20mins 8. Serve or store up in an airtight container in the refrigerator for up to 4 days and reheat when ready. Let it cool before you pack away 9. ENJOY!!!
