Behold the @BelcampoMeatCo "Asado Crucifix!" The extremely talented @Chef_Brent_H_Thomas began this process early in the morning, creating a nice blaze in the fire wagon to generate embers and natural charcoal for the base of the cross. The ribs were hung on the crucifix at 11:00am, and we ate them for dinner at 7:00pm. That's a nice 8-hour smoke! These were absolutely delicious.
