This easy one-pan garlic chicken pesto pasta is a flavorful and satisfying dish that's perfect for busy weeknights. With simple ingredients and minimal cleanup, it's a convenient meal that the whole family will love.
Ingredients: 2 chicken breasts, diced. 2 tablespoons olive oil. 3 cloves garlic, minced. Salt and pepper to taste. 2 cups chicken broth. 8 ounces pasta penne or fusilli. cup pesto sauce. cup grated Parmesan cheese. 2 tablespoons chopped fresh basil leaves.
Instructions: Put olive oil in a big skillet and heat it over medium-high heat. Cook the chicken until it turns brown, which should take about 5 to 7 minutes. Add the minced garlic to the pan and cook for another one to two minutes, until the garlic smells good. Add pepper and salt. Add the chicken broth and pasta, and stir to mix. Once it starts to boil, turn down the heat to medium-low. Put the lid on and let it simmer for 10 to 12 minutes, or until the pasta is done and most of the liquid is gone. Add the pesto sauce and mix it in well. Use grated Parmesan cheese to cover the top. Before serving, top with chopped fresh basil leaves.
