Ingredients: 6 large egg yolks. 3/4 cup granulated sugar. 2 cups heavy cream. 1 cup whole milk. 1 vanilla bean, split and scraped.
Instructions: Mix the egg yolks and sugar in a medium bowl with a whisk until the mixture is pale and thick. Over medium-low heat, add the vanilla bean seeds and pod to a saucepan. Add heavy cream and stir the mixture around. Pour the hot cream mixture into the egg yolks slowly while whisking the eggs all the time to temper them. Put the mixture back in the saucepan. Cook over low heat, stirring all the time, for about 5 to 7 minutes, or until it thickens and coats the back of a spoon. Do not let it get too hot. Take the custard off the heat and pour it into a clean bowl through a fine-mesh sieve. Cover the bowl with plastic wrap and press it right on top of the custard to keep a skin from forming. Put the custard in the fridge for at least four hours or overnight, until it is very cold. Put the custard in an ice cream maker and churn it according to the machine's directions until it's the consistency of soft serve. Cover the churned custard and put it in a container that can go in the freezer. Freeze for at least 4 hours, or until it is firm.
