A milder take on the classic Reuben sandwich featuring turkey instead of corned beef, perfect for those who prefer a lighter flavor profile.
Ingredients: 8 slices of rye bread. 1/2 lb thinly sliced cooked turkey breast. 8 slices Swiss cheese. 1 cup sauerkraut, drained. 1/4 cup Thousand Island dressing. 1/4 cup unsalted butter, softened.
Instructions: Spread softened butter on one side of each bread slice. On the unbuttered side of 4 slices, layer turkey, Swiss cheese, and sauerkraut. Spread Thousand Island dressing on the unbuttered side of the remaining 4 slices. Place the dressed slices on top of the sauerkraut to form sandwiches, buttered sides facing out. Preheat a skillet over medium heat. Place sandwiches in the skillet and cook until golden brown, about 4 minutes per side. Slice sandwiches diagonally and serve warm.
