Last night I dreamed I was in a huge marigolds field. October and November are one of the most beautiful months in México.

We celebrate Day Of the Dead in November. In my hometown Atlixco, Puebla during September and October you can see plenty of beautiful fields covered in cempasúchil (marigolds).

Flowers are soft , delicate and really fragrant; smell in the air it’s amazing. I’m missing México every day.

Missing Mexico, I made Pozole Verde out of Jason Wyrick’s Vegan Mexico cookbook last week and it was SO GOOD! If you haven’t tried this recipe yet, get on it! It’s got two of my favorite ingredient: tomatillos and hominy, plus chayote squash which turns out, is a squash I actually like! Between those things and the roasted pepitas, butter beans and spices, it’s a total flavor party! And what goes best with a party in your mouth? Rollercoaster

These last few months have been a rollercoaster! I decided to leave my job at USPS on 02/16/18. It was a tough decision, but ultimately I think everything will work out for the best. So in the meantime I am getting unemployment benefits. That is really nice because I can be a little bit more picky on what jobs that I apply for.

Matt and I went to Isla Mujeres, Mexico at the end of March. The sun, the ocean, the food - everything was SO awesome! I want to go back now! It is April 17 and there is still snow on the ground in MN. Thankfully, it is supposed to be nicer soon!

Matt is doing well with his DJ business. He has a lot of weddings lined up for this summer/fall. He is going to try and get a karaoke show or two in the Fargo/Moorhead area to get him through the winter months.

Other than that, I am just looking forward to warmer weather and green grass! Is green grass too much to ask for? I continuously ask myself why I live here. Ugh!
