Ingredients: 2 ripe avocados. 1 small red onion, finely diced. 1-2 cloves of garlic, minced. 1-2 ripe tomatoes, diced. 1 lime, juiced. Salt and pepper to taste. Fresh cilantro, chopped. 1 jalapeo pepper, seeded and minced optional.
Instructions: Cut the avocados in half, remove the pits, and scoop the flesh into a bowl. Mash the avocados with a fork or potato masher until you achieve your desired consistency chunky or smooth. Add the diced red onion, minced garlic, diced tomatoes, and chopped cilantro to the mashed avocados. Squeeze the lime juice over the mixture and season with salt and pepper to taste. Mix well. If you like some heat, add minced jalapeo pepper optional and stir. Taste and adjust the seasonings as needed. You can add more lime juice or salt if desired.
