A hot and fast brisket with a flavorful spice rub that is smoked to perfection in just 4 hours is sure to please. This method makes the barbecue go faster and taste even better.
Ingredients: 1 whole brisket 12-14 pounds. 2 tablespoons kosher salt. 2 tablespoons black pepper. 2 tablespoons smoked paprika. 1 tablespoon garlic powder. 1 tablespoon onion powder. 1 tablespoon cayenne pepper. 1 cup beef broth. 1/2 cup apple cider vinegar. 1/4 cup Worcestershire sauce. Wood chunks for smoking oak or hickory.
Instructions: Preheat your smoker to 300F 150C. Trim excess fat from the brisket, leaving a thin layer for flavor. In a bowl, mix kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper to create a rub. Apply the rub generously on both sides of the brisket, ensuring an even coating. Place the brisket on the preheated smoker grate and insert wood chunks for smoking. Combine beef broth, apple cider vinegar, and Worcestershire sauce in a spray bottle for basting. Maintain the smoker temperature at 300F 150C and smoke the brisket for 2 hours, spraying with the liquid mixture every 30 minutes. After 2 hours, wrap the brisket tightly in foil and continue smoking for an additional 2 hours. Check the internal temperature of the brisket; it should reach 200-205F 93-96C for optimal tenderness. Once the brisket is done, let it rest for 30 minutes before slicing against the grain. Serve the hot and fast brisket slices with your favorite barbecue sauce.
