Nonbinaries: Darkstripe (agender), Bluestar (transmasc bigender), Shadowsight (transfem genderfaun), Longtail (demiboy), Frostdawn (demigirl), Needletail (unlabeled don't ask her), Nightheart (also unlabeled), Breezepelt (transmasc demiboy), Crowfeather (agender), and Leafpool (transfemmasc demigirl)

Intersex: Mothwing, Longtail, Jayfeather, Sol, Squirrelstar, Bluestar, and Feathertail (i don't have any variation headcanons yet because researching that is insanely difficult #intersexism)
