Ingredients: 1 cup couscous. 2 cups water. 2 tablespoons olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 pound fresh spinach, chopped. 1 can 14 oz diced tomatoes. 1 teaspoon ground cumin. 1 teaspoon ground coriander. Salt and pepper to taste. 1 cup grated cheese optional. Fresh parsley for garnish.
Instructions: Boil 2 cups of water and pour over couscous in a large bowl. Cover and let sit for 5 minutes. Fluff with a fork. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, saut until translucent. Add chopped spinach and cook until wilted. Stir in diced tomatoes, ground cumin, ground coriander, salt, and pepper. Cook for another 5 minutes. Fold in cooked couscous and mix well. If desired, sprinkle grated cheese on top. Cover and let cook for an additional 5 minutes, allowing flavors to meld. Garnish with fresh parsley and serve hot.
