Sauted mushrooms, Swiss cheese, and spinach are grilled perfectly between two slices of whole grain bread to make this tasty and healthy sandwich.
Ingredients: 4 slices whole grain bread. 1 tablespoon olive oil. 2 cups sliced mushrooms. 2 cloves garlic, minced. Salt and pepper to taste. 4 slices Swiss cheese. 2 tablespoons mayonnaise. 2 teaspoons Dijon mustard. 1/2 cup baby spinach leaves.
Instructions: Put olive oil in a pan and heat it over medium-low heat. Add the minced garlic and sliced mushrooms. Season with salt and pepper. Cook for about 5 minutes, or until the mushrooms are soft. On one side of each slice of bread, put Dijon mustard. On the other side, put mayonnaise. Put the mushroom mix, Swiss cheese, and spinach leaves on top of two pieces of bread. Place the last few slices of bread on top, mayo side down. Set a clean skillet on medium heat and add the sandwiches. About 3 to 4 minutes on each side, until the bread is golden brown and the cheese melts. Take it off the heat, cut it up, and serve.
