Avial is to us is what Undhiyu is to Gujaratis or probably Shukto to Bengalis, a dish synonymous with Kerala cuisine. Every household has probably their own take on it. While a classic Avial is made with a melange of vegetables and tubers,Mutta Avial is a delicacy of South Travancore. So here is my take on mutta avial made with eggs, cherry potatoes, cashew nuts and drumsticks . The natural sweetness of Cashews( green cashews are the best) and coconut are a perfect foil to the hard boiled eggs. It is a mild dish for every palate, the heat coming from the green chillies and the flavor from turmeric,cumin and garlic.I have used scotch bonnet & another round green chilli which gives kind of a milky flavor that made even my dad wonder whether i added ghee into the dish. Unlike a regular Avial, this has no sour element in terms of raw Mangoes, tamarind or yogurt. I have used fresh home grown turmeric and it is important that final color is a greenish yellow to attain the right flavor . Before you take off from the stove some more curry leaves & raw coconut oil is added. My mum has this wonderful memory about this dish, when she was growing up with her 3 sisters, eggs were a delicacy and they would be quartered usually and served. So the first time she went to her aunt's place, she was served a whole egg in the avial and it indeed felt like an indulgence for her then. Interestingly, she still quarters the eggs when she makes the curries and inevitably we are never allowed more than 2 quarters for a meal 😆. These tiny things make such fond memories. I instead scored the eggs so that the flavor seeps through.
