Great Northern Distillery - Revisited
When John Teeling sold Cooley Distillery to Beam Inc in 2011, he never intended to retire from the whiskey industry. So when Diageo announced in 2012 their plan to close the Great Northern Brewery in Dundalk, Lo. Louth, and consolidate the production of Harp Lager at the St.James Gate brewery in Dublin, Teeling saw an opportunity to make a come back. He bought the disused brewery in 2013, and over the next two years converted it into a whiskey distillery. With a production capacity of over 40 million bottles per year, Great Northern Distillery is the second largest whiskey distillery in Ireland, surpassed only by Irish Distiller’s Midleton distillery facility in County Cork. It incorporates both a malt distillery with three large copper pot stills, as well as a grain distillery with three columns. Production began in August 2015, and the distillery is currently filling around 1000 casks of whiskey per day. A portion of this new-make whiskey is sold on to third parties, including Diageo who recently announced they are planning a return to the Irish whiskey market, while Great Northern Distillery is keeping the remainder to build up stocks for future own-branded whiskeys.
In November 2015 I reviewed two new make samples from the distillery that I had received from John Teeling at the Whiskey Live event in Dublin Castle that year. One year later, I met with the guys from GND again, at Whiskey Live last November. This time they brought with them cask samples of three different styles of new-make pot still distilled whiskey, that had been in the casks between 2 and 11 months. All three samples are of course still too young to officially be called “whiskey” yet. They were all taken directly from the casks and are all labeled “casked strength”, which is usually 63.5% ABV, minus Angel’s Share.
Review #177: GND Triple Distilled Malt
A triple distilled malt spirit, casked in December 2015 and bottled in November 2016.
Nose (undiluted): Very clean, hints of fruit, kirsch, vanilla, ginger and ozone. Palate (undiluted): Sweet and mouth-warming before the alcohol bite sets in. Soft vanilla and tropical fruit notes in the background, pepper and mezcal. Nose (diluted): Much more body and discernible aromas. Lots of citrus, lemon and lime, pear drops, banana, pineapple, vanilla, puff pastry and hints of oak wood. Palate (diluted): Fresh fruit, lemon, tropical and green vegetal flavours, vanilla and a great sweet/sour balance. Malty cereal, sourdough bread with aged butter. Finish/Verdict: Fairly short finish with lingering fruit notes and a hint of oak. For a less-than-a-year-old spirit very very drinkable already, with a very clean, fruit forward character and a buttery, creamy texture. Looking forward for this to reach maturity.
Review #178: GND Peated Malt
Triple distilled peated malt, casked in May 2016 and bottled in November.
Nose (undiluted): Milky, vanilla ice cream, soft medicinal peat. Palate (undiluted): Sweet peat smoke, vanilla custard. Much more peat-forward than on the nose. The same mezcal note as in the unpeated malt in the background. Nose (diluted): Much stronger peat nose than undiluted. Medicinal peat, TCP, farmyard, milk, cereal and some faint fruit notes in the background. Palate (diluted): A buttery mouthfeel with earthy peat, sour cream, citrus, more farmyard, brine and savoury notes. Finish/Verdict: Quite intense fresh peat, a good balance between sweet, tart citrus and savoury flavours. Promising!
Review #179: GND Pure Pot Still
Triple distilled pot still spirit, made from malted and unmalted barley. Distilled in September 2016 and bottled in November 2016.
Nose (undiluted): Very soft, with grassy, green aromas. Palate (undiluted): Sweet and warming from the high ABV, with vegetal and farmyard flavours, citrus, slightly metallic. Nose (diluted): More nuanced with morello cherries, rhubarb, gooseberry, overripe apple, fresh cut grass and farmyard. Palate (diluted): Lime, grapefruit, grappa, rhubarb, sorrel and other green leafy vegetals, cereal notes, sourdough bread and yeast. Verdict: With only a bit more than a month in the cask, this is very close to new make and there is almost no wood influence to be found. As such, it is very telling how much flavour there is already, lots of grassy, green vegetal, citrus fruit and cereal notes. It will be very interesting to see how this develops into a mature spirit.
Dram #64 - New Make Spirit from the brand new Kingsbarns distillery - a great chance to try a spirit straight from the still before it has to sit for three years to then legally be called 'whisky'. Unfortunately it will still be a couple of years until Kingsbarns can can sell their own release as a whisky as they only started distilling in 2015, but it's very interesting to find out what it could be like!

La valeur n’attend pas le nombre des années, c’est bien connu. Dans le cas présent, c’est à un tout nouveau-né que nous avons affaire, tout juste sorti de l’alambic. Plus que son âge, ce qui surprend le plus dans ce new make, ce sont les instincts dominateurs du seigle tant cette céréale règne en maitresse des lieux.

Nez : Capiteux, onctueux. La dominante de seigle nous emmène directement devant la cuve de fermentation. Avec une facilité déconcertante, le seigle a pris le pouvoir. Puis, les épices (badiane, muscade) arrivent de peu avant des fruits secs (amande, cacahuètes).
Bouche : Puissante, carrée. Envoûtante saveur de fleur d’oranger. Ses tannins sont présents. Ils enrobent le palais d’une fine couche de chocolat et de vanille mélangés. Effectue un retour sur les arachides (cacahuètes) et les fruits secs (noix de cajou).
Finale : Longue, ferme. Le fond d’artichaut et le céleri pour la partie potagère, la badiane, le cumin pour les épices, les cerises noires pour le fruit. Ce cocktail détonnant fonctionne à merveille et a le mérite de nous emmener vers de nouveaux horizons.
