Oopsie Bread / Cloud Bread / No Carbs Bread..
Well, my recipe exploration has taken me over to the ‘oopsie’ or ‘cloud bread’ that is well known for having no carbs. I have always been a fiend for bread, especially freshly made from Tesco bakery, that you can cut into tree trunks yourself - so I would love a no carb bread!
The recipe was: 3 eggs, 100g cream cheese, pinch of salt. (baking powder 1/2 tea spoon, although I couldn’t find any)
Method is as follows: separate the eggs into whites/yolks. Whip the egg whites with salt until very stiff (i.e. bowl over head trick). Mix the yolks with the cream cheese very well, add any seeds or baking powder here (baking powder will make the bread rise a little more)
Gently fold the egg whites into the yolk mix - keeping air in the egg whites. Put the oopsies onto a baking tray (mine had to go into a loaf style as my baking tray wasn’t big enough) and bake in middle of oven at 150 degrees C or 300 degrees F for 25 minutes - until they turn golden.
Mine were in for a little more than 25 minutes, but I wanted the golden look on top! I also split the mixture and put herbs/garlic on top of one half, which makes a garlic bread style oopsie.
Truth be told, the bottom as pictured, is quite soggy - it couldn’t be used as a sandwich, but I think I’ll opt to use them as crouton style additions to a healthy soup! (To make my mind think I am having bread, it’s all about tricks you know!)
If anyone has any tips for ‘not having a soggy bottom’ with oopsie bread, as Our Mary herself would say!
