These golden delicious bits of yumminess are pig brains. Swipe if you are brave. I cleaned off the membrane and poached them in a #courtboullion. Then dipped in egg and quick fried. They are so rich and creamy. They say that you should cook with the wine you would drink. I am getting in as much oxtail as I can before winter is totally over.
