A good way to get a feel for it all is Hermitcraft recap! It's a YouTube channel dedicated to sharing the perspective of all the active hermits so that you don't have to.

Also because of the sheer amount of content that they all give out (unless your dedicated) I wouldn't worry about watching from the beginning. If a hermit you decide to watch mention something out of context, search it up and there is a likely chance you'll get a video explaining it.

As for who to watch, you can get a feel in the recap, but for season 6 someone made a flow chart for who to watch based on your likes, it won't have all the hermits on season 7 but I'll see if I can find it for you!
