Ingredients: 2 ripe bananas, mashed. 1 cup gluten-free oats. 1/4 cup almond butter. 2 tbsp maple syrup. 1/4 cup vegan chocolate chips. 1/4 cup chopped walnuts. 1/2 tsp vanilla extract.
Instructions: Preheat oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, combine mashed bananas, oats, almond butter, maple syrup, chocolate chips, walnuts, and vanilla extract. Mix until well combined. Using a spoon or cookie scoop, drop dough onto the prepared baking sheet, forming cookies. Bake for 12-15 minutes, or until cookies are golden brown.
