Oda always has a way of telling the character's power, so it's very unlike that Caroline — the substitute queen while Ivankov and Inazuma were away — has any power, like a fruit of persuasion or some shit like it, so, basically what they did was to say "Girl, you slay on that dress" and Sanji went "Shit, I really do" and then went on a run with everyone else
Sanji also wasn't showed eating/drinking anything before Iva return, so, either Sanji have some demons inside him that need to be addressed — which means that the next straw hat member needs to be a therapist — or must have been the wind
