Healthy Mini Oat Pancake Bites
Last day of yule. Only day I got. Started with some direction from my pain direction doctor. It's a lead. Maybe I'll get answers soon.
Then, finally, I got food. Started out with mint coffee and chocolate filled pancake bites. It's like, wannabe æbleskiver (though between the recipe, and the taste/texture of these frozen pancake bites, it might actually have been close. Not sure. Never actually had a chance to make authentic ones myself lmao. Close enough under the circumstances.)
It gave me enough energy to cook. It took way too long to cook, especially for what was made, and I was crying by time I was done, but I ate, while a friend read yule stories to me. So, pre-made BBQ ribs, with Danish scalloped potatoes, and frozen mashed turnips that expired in November. I was going to open a can of beets, but I ran out of spoons.
The ribs were delicious, and while being read to, it did make the meal feel special. So I can count it as a holiday. Close enough. 1 day out of 12 is depressing, and I spent most of the time starving and alone, but... I ate twice today.
Now for some CBD to help with the agony I'm in from cooking. This used to be a 2 spoon recipe for me. Now? It took hours for no reason, and used up a good 10 spoons. But hopefully the lead my Dr gave me will get that back to at least a 5 spoon meal?
Vegan Pancake Bites
Spring is here and today I have a new and delicious vegan recipe - pancake bites! Packed with the PB2 Performance - Peanut Protein (Dutch Cocoa) Powder, these bites are perfect for on the go, before a workout, or during a weekend breakfast with family.

VEGAN PANCAKE BITES
[ INGREDIENTS: ]
Makes 36 mini pancake bites
1 cup flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
4 tablespoons of PB2 Peanut Protein Powder
1 cup non-dairy milk
1 tablespoon apple cider vinegar
1 teaspoon vanilla
maple syrup for dipping
topping of your choice (I used vegan chocolate chips and berries)
[ INSTRUCTIONS: ]
1. Preheat oven to 350 degrees. Grease a mini muffin pan.
2. Whisk together flour, sugar, baking powder, salt, PB2, milk, apple cider vinegar, and vanilla in a large bowl.
3. Fill the pan with batter and stud with toppings of your choice.
4. Bake the pancake bites for 8-10 minutes. Allow to cool for 10 minutes.
5. Serve with a side of maple syrup and enjoy!
