Ingredients: 6 chicken thighs, boneless and skinless. 12 slices bacon. Salt and black pepper to taste. 2 tablespoons olive oil. 1/2 cup apple cider. 1/4 cup chicken broth. 2 tablespoons Dijon mustard. 2 tablespoons honey. 2 cloves garlic, minced. 1 teaspoon thyme leaves. 1 tablespoon butter. Chopped parsley, for garnish.
Instructions: Preheat oven to 400F 200C. Season chicken thighs with salt and black pepper. Wrap each chicken thigh with 2 slices of bacon, securing with toothpicks if needed. Heat olive oil in an oven-safe skillet over medium-high heat. Add chicken thighs and cook until bacon is crispy, about 3-4 minutes per side. Transfer skillet to the preheated oven and bake for 15-20 minutes or until chicken is cooked through. Remove skillet from the oven and transfer chicken to a plate. Place skillet back on the stove over medium heat. Add apple cider, chicken broth, Dijon mustard, honey, minced garlic, and thyme leaves to the skillet. Bring the sauce to a simmer and cook until slightly thickened, about 5 minutes. Stir in butter until melted and well combined. Return chicken thighs to the skillet and spoon sauce over them. Garnish with chopped parsley before serving.
