If I cast a spell woth convoke while controlling a paradox engine, will the Engine untap those creatures I tapped for the convoke?
Yes, it will.
A spell isn’t considered cast until the entire casting process is complete. The last part of casting a spell is paying its costs, which is when creatures are tapped for convoke and mana is paid.
Paradox Engine triggers once the spell’s costs have been paid and that trigger will untap all of your nonland permanents, including any nonland creatures you tapped to convoke the spell.

This card is all kinds of nuts. With enough mana sources that don’t come from lands, Paradox Engine can just keep you going indefinitely. Everything other than your lands are untapped when you cast something, so perhaps something around six mana can really get you everything you need. Whether you’re just infinitely casting Capsize, or even without going infinite getting a little extra mana or giving your creatures pseudo vigilance, this artifact is going to demand that it be answered, or you’re going to probably pull away with the game in short order.

What happens if I cast harvest season while I have a paradox engine on the battlefield? Will I still search for lands?
When you cast Harvest Season (or any other spell) while you control Paradox Engine, Paradox Engine will trigger and that trigger will resolve and untap all of your nonland creatures before the spell you cast resolves.
When Harvest Season starts to resolve, it counts the number of tapped creatures you control at that time. If you don’t control any tapped creatures at that time, due to Paradox Engine’s trigger for example, then X will be 0 and you won’t be able to put any basic lands onto the battlefield with Harvest Season.
(Note that you have a chance to tap your creatures between Paradox Engine’s trigger resolving and Harvest Season resolving. You have to have a way to do so, though, such as mana abilities on the creatures. You can’t just tap them because you want to tap them.)
