If I cast a spell woth convoke while controlling a paradox engine, will the Engine untap those creatures I tapped for the convoke?
Yes, it will.
A spell isn’t considered cast until the entire casting process is complete. The last part of casting a spell is paying its costs, which is when creatures are tapped for convoke and mana is paid.
Paradox Engine triggers once the spell’s costs have been paid and that trigger will untap all of your nonland permanents, including any nonland creatures you tapped to convoke the spell.

i mean it’s legal, and tbh reasonable, to require photo id to change social security records. it’s the fact that my options are 1) send it by mail, wait 2-6 weeks or 2) somehow find several hours to sit in wait in the lobby to do it in person in their incredibly restrictive office hours

Oh, I will. I have various subjects prepared, and I want to bet that the most heard comment from my lips will be “Actually, they made the right choice in not casting the god inspired by Anubis in black”. Followed, of course, by a lecture on the gods’ metaphysicalities of the worst, rambling kind, full of run-on sentences, anecdotes and frame stories.
And when someone accuses me of slow play because of it, I’ll go “you should have just known this already, so it’s your fault and you should get a game loss for criminal ignorance.”
