This easy pasta salad is a refreshing dish perfect for picnics, potlucks, or as a light meal. The roasted garlic green beans add a savory depth, while the Dijon and tarragon dressing provides a tangy and herby flavor.
Ingredients: 8 ounces pasta of your choice. 1 pound green beans, trimmed. 4 cloves garlic, minced. 2 tablespoons olive oil. Salt and pepper to taste. 1/4 cup Dijon mustard. 2 tablespoons white wine vinegar. 1/3 cup extra virgin olive oil. 1 tablespoon fresh tarragon, chopped. 1/4 cup red onion, finely chopped. 1/4 cup cherry tomatoes, halved.
Instructions: Preheat the oven to 400F 200C. Toss the trimmed green beans with minced garlic, olive oil, salt, and pepper on a baking sheet. Roast the green beans in the preheated oven for about 15-20 minutes until tender and slightly caramelized. Meanwhile, cook the pasta according to package instructions until al dente. Drain and rinse under cold water. In a small bowl, whisk together Dijon mustard, white wine vinegar, extra virgin olive oil, chopped tarragon, salt, and pepper to make the dressing. In a large mixing bowl, combine the cooked pasta, roasted green beans, chopped red onion, and halved cherry tomatoes. Pour the dressing over the pasta salad and toss until everything is well coated. Chill the pasta salad in the refrigerator for at least 30 minutes before serving. Garnish with additional tarragon if desired before serving.
