Tender chicken, fresh asparagus, sweet cherry tomatoes, and savory pesto sauce are tossed with penne pasta in this colorful and tasty dish. It only takes one pan and is great for a quick and easy weeknight dinner.
Ingredients: 8 oz penne pasta. 2 chicken breasts, diced. Salt and pepper to taste. 2 tbsp olive oil. 1 bunch asparagus, trimmed and cut into bite-sized pieces. 1 cup cherry tomatoes, halved. 1/2 cup pesto sauce. 1/4 cup grated Parmesan cheese.
Instructions: Following the directions on the package, cook the pasta, drain it, and set it aside. Add salt and pepper to the diced chicken breasts. Warm up the olive oil in a big pan over medium-high heat. Season the chicken and add it to the pan. Cook for about 5 to 7 minutes, or until the chicken is golden brown and fully cooked. Take the chicken out of the pan and set it aside. Put asparagus and cherry tomatoes in the same pan. It will take about 5 minutes of cooking until the tomatoes are slightly blistered and the asparagus is soft. Return the chicken and cooked pasta to the pan. Add the pesto sauce and stir it in until everything is covered evenly and hot. Grate some Parmesan cheese on top. Enjoy while hot!
