The Master’s Anthology is a new premium series from the traditional Highland distillery The Glendronach, celebrating the art of sherry cask maturation in three chapters. Ode to the Dark is the intense highlight of this trilogy – a profound, rich single malt that showcases the distillery’s unmistakable style in its darkest and most elegant form.

This expressive whisky was matured entirely in select Pedro Ximénez sherry casks, which impart exceptional depth and a naturally dark color. Non-chill filtered and free from added coloring, it retains the full character of both the cask and the distillery.

#carrilleras al #pedroximenez Como lo he hecho: . Dorar bien las carrilleras en la olla salpimentadas . Retirar y añadir en el mismo aceite 2 ajo, 1 cebolla, 1 puerro, 2 zanahorias, medio pimiento rojo pequeño y sofreír . Añadir las carrilleras y un atado de tomillo, romero y perejil . echar un chorro o dos o tres de coñac . Cuando evapore añadir un par de vasos de vino pedro ximenez dejarle un par de minutos o tres y añadir un par de vasos de agua . Dejar cocer unas 2 horas más o menos ( sin olla rápida) . Retirar las carrilleras ya echas ( pinchar con un cuchillo y si sale bien están hechas) . Pasar la salsa . Añadir un poco de mantequilla para darle un poco de brillo .
