Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1/2 cup brown sugar, packed. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1/2 cup cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 tablespoon instant coffee granules. 1 cup chocolate chips. 1/2 cup crushed peppermint candies.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs, one at a time, followed by the vanilla extract. In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt, and instant coffee granules. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips and crushed peppermint candies. Scoop spoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie. Bake in the preheated oven for about 10-12 minutes, or until the edges are set but the centers are still slightly soft.
