Ingredients: 1 1/2 cups gluten-free all-purpose flour. 1 cup coconut sugar. 1/3 cup unsweetened cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 cup unsweetened almond milk. 1/3 cup coconut oil, melted. 1 tablespoon apple cider vinegar. 1 teaspoon vanilla extract. 1/2 cup dairy-free chocolate chips.
Instructions: Preheat oven to 350F 175C and line a muffin tin with cupcake liners. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt. Add almond milk, melted coconut oil, apple cider vinegar, and vanilla extract to the dry ingredients. Stir until just combined. Fold in chocolate chips. Divide batter evenly among the prepared cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Once cooled, decorate with your favorite frosting or enjoy as is! Store leftovers in an airtight container at room temperature for up to 3 days.
