Ingredients: 1 lb rigatoni pasta. 1 lb Italian sausage, casing removed. 2 bell peppers, thinly sliced. 1 onion, thinly sliced. 3 cloves garlic, minced. 1 can 28 oz crushed tomatoes. 1 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. 2 tablespoons olive oil. 1 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Before you start cooking, heat the oven to 375F 190C. Follow the directions on the package to cook the rigatoni until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Break up the Italian sausage with a spoon as it cooks until it turns brown. In a skillet, add onion, bell pepper slices, and garlic minced. Make sure the vegetables are soft. Toss in the dried oregano and tomato chunks. Let it cook for 5 minutes. Add the cooked rigatoni to the sausage and pepper mix. Add pepper and salt to taste. Put the mixture in a baking dish that has been greased. Add mozzarella cheese shreds and Parmesan cheese grated on top.
