Vegetarian Picadillo with Mushrooms and Walnuts with Turmeric Rice
A quick and flavorful Picadillo recipe made effortlessly in the Instant Pot.
Ingredients: 1 lb ground beef. 1 onion, finely chopped. 2 cloves garlic, minced. 1 bell pepper, diced. 1 can 14 oz diced tomatoes. 1/2 cup raisins. 1/4 cup sliced green olives. 2 tbsp tomato paste. 1 tsp ground cumin. 1 tsp dried oregano. 1/2 tsp ground cinnamon. Salt and pepper to taste.
Instructions: Set Instant Pot to saut mode and brown the ground beef. Add chopped onions and garlic, saut until softened. Stir in diced bell pepper, diced tomatoes, raisins, sliced green olives, and tomato paste. Season with ground cumin, dried oregano, ground cinnamon, salt, and pepper. Close the Instant Pot lid and set to pressure cook for 8 minutes. Once cooking is complete, release pressure manually. Serve the Picadillo over rice or with your favorite side dish.

Ingredients: 1 lb ground beef. 2 tablespoons olive oil. 1 onion, finely chopped. 1 bell pepper, finely chopped. 3 cloves garlic, minced. 1 tomato, diced. 1 tablespoon tomato paste. 1 teaspoon ground cumin. 1 teaspoon dried oregano. 1/2 teaspoon paprika. 1/4 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. Salt and pepper to taste. 1/2 cup green olives, sliced. 1/4 cup raisins. 2 tablespoons capers. 1/2 cup tomato sauce. 1/4 cup water. 2 tablespoons fresh cilantro, chopped.
Instructions: Warm up the olive oil in a big pan over medium-low heat. Cumin, bell pepper, and onions should be added. About 5 minutes of cooking will soften the food. Break up the ground beef with a spoon as it cooks until it turns brown. Add tomato paste, cumin, oregano, paprika, cinnamon, cloves, salt, and pepper, and mix well. Put in water, tomato sauce, raisins, capers, olives, and olives. Use a stir to mix. Turn down the heat and let the sauce simmer for 15 to 20 minutes, until the flavors blend and the sauce gets thick. Check the seasoning and make changes if needed. Add fresh cilantro as a garnish before serving.
