Ingredients: 2 cans of tuna, drained and flaked. 2 cups of mixed greens e.g., lettuce, spinach, arugula. 1 cup of shredded red cabbage. 1 carrot, julienned. 1 cucumber, thinly sliced. 1/2 red bell pepper, thinly sliced. 1/4 cup of sliced scallions. 1/4 cup of chopped fresh cilantro. 1/4 cup of chopped fresh mint. 1/4 cup of roasted peanuts, chopped. 1/4 cup of soy sauce. 2 tablespoons of rice vinegar. 2 tablespoons of sesame oil. 1 tablespoon of honey. 1 clove of garlic, minced. 1 teaspoon of grated fresh ginger. Salt and pepper to taste.
