It's fun and colorful, and Confetti Ham Salad is great for picnics, potlucks, or as a side dish for any meal. It's a tasty and filling dish with diced ham, pasta, and a bunch of crisp vegetables all covered in a creamy and tangy dressing.
Ingredients: 2 cups cooked ham, diced. 1 cup cooked small pasta such as rotini or macaroni. 1/2 cup red bell pepper, diced. 1/2 cup green bell pepper, diced. 1/2 cup red onion, finely chopped. 1/2 cup celery, finely chopped. 1/2 cup frozen peas, thawed. 1/2 cup mayonnaise. 2 tablespoons Dijon mustard. 2 tablespoons white wine vinegar. 1 teaspoon sugar. Salt and pepper to taste. Fresh parsley for garnish optional.
Instructions: The cooked pasta, red and green bell peppers, red onion, celery, and thawed peas should all be put in a large bowl and mixed together. Put the mayonnaise, Dijon mustard, white wine vinegar, sugar, salt, and pepper in a different small bowl. Use a whisk to mix the ingredients well. Pour the dressing over the salad ingredients and toss them around a little to make sure everything is covered. Put the bowl in the fridge with the lid on for at least an hour before serving so the flavors can mix. If you want, you can add fresh parsley to the top before serving. Love your Confetti Ham Salad!
