Tossed in a creamy dressing are diced ham, crunchy celery, sweet red bell pepper, and tangy red onion. Served between slices of fresh bread with crisp lettuce leaves.
Ingredients: 1 cup cooked ham, diced. 1/4 cup celery, finely chopped. 1/4 cup red bell pepper, finely chopped. 2 tablespoons red onion, finely chopped. 1/4 cup mayonnaise. 1 tablespoon Dijon mustard. 1 teaspoon lemon juice. Salt and pepper, to taste. Lettuce leaves, for serving. Bread slices, for serving.
Instructions: Dice the ham, celery, red bell pepper, and red onion and put them in a bowl. Take a different bowl and mix together the lemon juice, Dijon mustard, and mayonnaise. Mix the ham and vegetables together, then add the dressing and toss everything together. Add pepper and salt to taste. Put the ham salad in the fridge for at least 30 minutes to let the flavors mix. Put lettuce leaves on bread slices to make sandwiches. Add a lot of the confetti ham salad mixture on top. To make a sandwich, put another slice of bread on top. Cut the sandwiches in half diagonally and serve.
