This pineapple curry is a quick, easy Thai curry dish that's a perfect balance of sweet and spicy. Get these bold flavors straight from your own wok.
Thai Pineapple-Shrimp Curry
This rich, delicious meal will satisfy any Thai-loving guest.
It’s a 2 part process: make the yellow curry paste, then saute shrimp and veggies, to combine all together.
Ingredients:
For the yellow curry paste:
5 garlic cloves
3-4 sprigs worth of Thai basil leaves
1.5 tsp chopped lemongrass
1.5 tsp cumin powder
1.5 tsp corriander powder
1.5 tsp turmeric powder
1 tsp ground paprika
1 tsp salt
1 tsp white pepper
1.5 tbsp ginger paste
1 tbsp brown sugar
1/4 cup water
1/2 med. white onion
Blend. Reserve for later.

Additional ingredients to use:
1/2 med white onion
1 red bell pepper
1 lb shrimp, peeled/ deveined
4-5 sprigs worth of Thai basil leaves
12oz can unsweetened coconut milk
4-5 tbsp canned crushed pineapple
1 tbsp corn starch in 1 tbsp water

Season 1lb Shrimp with 1 tsp salt & 1 tsp cracked black pepper.
Sear on both sides in oiled saute pan. Do not over cook shrimp, this should only take about 2 mns total.
Remove from pan. set aside.

Finely chop remaining 1/2 med white onion, finely chop 1/2 red bell pepper, finely chop remaining 2 garlic cloves.

On medium-low heat, add more olive oil, heat, then lightly saute chopped onion for about 4 mns. Add chopped bell peppers, saute for 4 mns, add chopped garlic, saute for 2 mns. add about 1/2 tsp salt and white pepper here, stirring constantly.
Add curry leaves, stir, saute for 3 mns.
Add 4 or 5 tbsp yellow curry paste we created earlier, stir.
simmer for about 5 mns, or until begins to separate from oil.
Add coconut milk
Add 4 or 5 tbsp crushed pineapple.
Add the corn starch (blend the starch in about 1 tbsp warm water first to dilute so it won't clump up).
Adjust for salt. add 1 tsp cracked black pepper.

Bring to light boil. Boil for about 5 mins.
Add in the Shrimp and remaining bell peppers (julienned).
Boil another 4 mins.
Turn off heat.
Add remaining chopped Thai basil leaves.
Enjoy with White rice.
