These Shredded Duck Burgers with Plum Sauce are a gourmet twist on traditional burgers. Tender shredded duck meat is sautéed in a savory soy sauce and garlic mixture, then topped with Swiss cheese, lettuce, and red onion. The crowning glory is the sweet and tangy plum sauce that takes these burgers to a whole new level of flavor.
Ingredients: 1 lb shredded duck meat. 4 burger buns. 1 cup plum sauce. 1/2 cup shredded lettuce. 1/2 cup sliced red onion. 4 slices of Swiss cheese. 4 tablespoons mayonnaise. 2 tablespoons soy sauce. 2 cloves garlic, minced. 1 tablespoon vegetable oil. Salt and pepper to taste.
Instructions: Heat vegetable oil in a pan over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant. Add shredded duck meat and soy sauce. Cook for 5-7 minutes, stirring occasionally, until heated through. Toast the burger buns in a toaster or on a hot griddle until lightly browned. Spread mayonnaise on the bottom half of each bun. Place a slice of Swiss cheese on the top half of each bun and melt it slightly. Assemble the burgers: Place a generous portion of shredded duck meat on the bottom bun. Top with lettuce and sliced red onion. Drizzle plum sauce over the duck meat and then cover with the top bun. Serve immediately, and enjoy your delicious Shredded Duck Burgers with Plum Sauce!

King salmon fillets are marinated in a tasty plum sauce and then grilled in this recipe. The sweet and sour sauce goes well with the rich salmon flavor, making this a dish that's great for any event.
Ingredients: 4 King salmon fillets 6 ounces each. Salt and black pepper to taste. 2 tablespoons olive oil. 1 cup plum preserves. 2 tablespoons soy sauce. 2 tablespoons rice vinegar. 1 teaspoon grated fresh ginger. 2 cloves garlic, minced. 1 tablespoon sesame oil. 1 tablespoon chopped fresh cilantro optional, for garnish.
Instructions: Warm the grill up to a medium-high level. On top of the salmon fillets, sprinkle them with olive oil and salt and pepper. Put soy sauce, rice vinegar, ginger, garlic, and plum preserves in a small saucepan. With the heat on medium, melt the preserves and make the sauce smooth. This should take about 5 minutes. Take the sauce off the heat and add the sesame oil. Salmon fillets should be grilled for four to five minutes on each side, or until a fork can easily flake the fish. Brush salmon with a lot of plum sauce in the last minute of cooking. Take the salmon off the grill and give it a minute or two to rest. If you want, you can serve the grilled salmon with chopped cilantro on top and extra plum sauce on the side.

I wanted to make some applesauce yesterday but I only had one apple! So I looked in the fruit bin and found 4 peaches that were past their prime, plus 2 too-soft plums and a vanilla bean that had been hanging around my spice cabinet for too long. I cut up all the fruit (peeled the apple first), put it in a pot to cook with some honey and that vanilla bean and voila! A really tasty side dish for our grilled beef ribs. Here’s the recipe (feel free to improvise): Fruit Sauce 4 ripe peaches 2 large ripe plums 1 large apple, peeled 1/4 cup honey Small piece of vanilla bean Cut up the fruit and place it in a large saucepan. Add the honey and vanilla bean. Cover the pan. Cook on low-medium heat for about 20-25 minutes or until all the fruit is soft (check the fruit and stir occasionally during cooking to make sure the fruit doesn’t burn if heat too high or isn’t cooking fast enough if heat too low).
