Elevate your BBQ game with this Head Country Grill Glazed Spinach and Goat Cheese Pork Roulade. The combination of tender pork, vibrant spinach, and creamy goat cheese, glazed with Head Country Bar-B-Q Sauce, creates a mouthwatering dish that's perfect for any barbecue occasion.
Ingredients: 2 lbs pork loin, butterflied. 1 cup baby spinach, chopped. 1/2 cup goat cheese, crumbled. 1/4 cup Head Country Championship Seasoning. 1/4 cup Head Country Bar-B-Q Sauce. 2 tbsp olive oil. Salt and pepper to taste.
Instructions: Preheat your grill to medium-high heat. Lay the butterflied pork loin flat and season both sides with salt, pepper, and Head Country Championship Seasoning. Spread chopped spinach evenly over the pork loin, leaving a small border around the edges. Crumble goat cheese over the spinach layer. Carefully roll the pork loin into a tight cylinder, securing it with kitchen twine at regular intervals. Brush the outside of the roulade with olive oil and sprinkle with additional Head Country Championship Seasoning. Place the roulade on the preheated grill and cook for 30-40 minutes, turning occasionally, until the internal temperature reaches 145F 63C. During the last 10 minutes of cooking, brush the roulade with Head Country Bar-B-Q Sauce, allowing it to caramelize and form a flavorful glaze. Remove the roulade from the grill, let it rest for 10 minutes, then slice into rounds and serve. Enjoy the succulent Head Country Grill Glazed Spinach and Goat Cheese Pork Roulade!
