Ingredients: 6 medium-sized potatoes, boiled and peeled. 1 cup boiled chickpeas. 1 onion, finely chopped. 1 tomato, finely chopped. 2 green chilies, finely chopped. 1/4 cup fresh coriander leaves, chopped. 1/4 cup tamarind chutney. 1/4 cup mint-coriander chutney. 1 teaspoon chaat masala. 1 teaspoon roasted cumin powder. Salt to taste. Oil for frying.
Instructions: Boil the potatoes and then cut them in half lengthwise. Scoop out the middle, leaving a thin layer of potato flesh around the edges. Put the potato flesh you scooped out into a bowl and mash it. Then add the boiled chickpeas, onion, tomato, green chilies, coriander leaves, chaat masala, roasted cumin powder, and salt. Fill the potato halves with this mix. Put oil in a pan and heat it over medium-low heat. Fry the stuffed potato halves until the outside is golden brown and crunchy. Use paper towels to soak up the extra oil. Put the stuffed potatoes that have been fried on a plate to serve. Spread the stuffed potatoes with tamarind chutney and mint-coriander chutney.
